Baked Donuts


I love me a donut! But donuts don't really fall into the good for you category. So I'm not quite sure if the fact that the town I live in doesn't have a donut shop is a good thing or a bad thing. It is definitely a great thing that I know how to make them at home. But the soft, melt in your mouth, sprinkley ones I make aren’t made the traditional way. I ditch the oil and bake them instead!
There are tons of recpies out there for homemade baked donuts (one of my favorites is a vegan version by Chloe Coscarelli in fact, you can get her awesome book here) but I like how super simple, quick, and easy to make these donuts are to bake up. Here's how to make your own in 10 simple steps:

Homemade Baked Donuts

Ingredients:

3/4 cup granulated sugar
1 large egg
1 1/2 cups all purpose flour
2 tsp baking power
1/4 tsp salt
1/4 tsp ground nutmeg
1/4 cup melted butter
3/4 cup milk (or milk substitute, almond or soy)
1 tsp vanilla extract



For the icing:
3 cups powdered sugar
5 tbsp milk
Sprinkles
Directions:

Preheat oven to 350°F.

1. Lightly grease a donut pan with butter or cooking spray. 
2. In a large bowl, beat together with a whisk, the sugar and egg until light in color.
3. In another bowl, whisk together the flour, baking powder, salt and nutmeg.
4. Pour into egg mixture and stir to combine. Then pour in the melted butter, milk and vanilla extract. Mix together. 
5. Divide batter evenly into donut pan, filing each mold 2/3 full.
6. Bake for 14 minutes, or until a tester inserted into the center comes out clean.
7. Remove from pan and let cool on a wire rack.
8. Repeat 5-7 until all the batter had been used. 
9. To make the icing slowly add milk 1 tablespoon at a time to the powdered sugar in a bowl and whisk until there are no clumps, and the icing is thick and not too runny.
(If the icing is too thin add more powdered sugar. If it’s too thick add more milk.)
10. After the donuts have cooled dip one side of each donut into the icing and then shake the sprinkles over the top of each before the icing has dried and set.
Eat them up or share with people you must really like!
