You wont be able to eat just one. And better yet they are just the kind of cookie you don't have to feel guilty about enjoying! Vegan, and gluten free, this treat will nourish your body and heart.
Ingredients: 2 cups oats 1 2/3 cup gluten free all-purpose flour (Bob's Red Mill) 2/3 cup cocoa powder 1/2 tsp baking soda 1/2 tsp baking powder 1/2 tsp salt 1 1/2 cups organic granulated sugar 2 tbsp ground flax seeds 2/3 cup non dairy milk (soy, or almond) 1/2 cup pure extra virgin coconut oil (room temperature) 1 tsp pure vanilla extract 1/2 tsp almond extract 1 cup semi-sweet chocolate chips
Directions: preheat oven to 350° 1. Line baking sheet with parchment paper. In a medium sized bowl stir together oats, flour, cocoa powder, baking soda, baking powder and salt. 2. In a large bowl beat together by hand with a fork, the sugar, flax seed, and non dairy milk until smooth and fully incorporated. Add the coconut oil, vanilla and almond extract and beat until well mixed. (There’ll be clumps of coconut oil, that's ok, just mash up the big ones.) 3. Fold in the flour mixture. Then stir in the chocolate chips. 4. Drop one generous tablespoon full of dough on a foil lined baking sheet for each cookie. -I usually place about 6-8 cookies per baking sheet on this recipe. The cookies don’t spread much. 5. Bake 10 minutes. Let cookies cool slightly in baking pan before transferring to a wire rack.
