Cuddle. A way of showing love or affection. An affectionate hug. And a perfect way to describe these unbelievably craggy, soft, chewy cookies. These chunky cookies are packed with yummy goodness. You wont be able to eat just one. And better yet they are just the kind of cookie you don't have to feel guilty about enjoying! Vegan, and gluten free, this treat will nourish your body and heart.
Ingredients: 2 cups organic rolled oats 1 2/3 cup gluten free all-purpose flour (Bob's Red Mill) 2/3 cup cocoa powder 1/2 tsp baking soda 1/2 tsp baking powder 1/2 tsp salt 1 1/2 cups organic granulated sugar 2 tbsp ground flax seeds 2/3 cup non dairy milk (soy, or almond) 2/3 cup organic canola oil 1 tsp baker's extract (or sub vanilla extract) 1/2 tsp almond emulsion or extract 2/3 cup vegan dark chocolate chips
Directions: preheat oven to 350° 1. Line baking sheet with parchment paper. In a medium sized bowl stir together oats, flour, cocoa powder, baking soda, baking powder and salt. 2. In a large bowl beat together by hand with a fork, the sugar, flax seed, and non dairy milk until smooth and fully incorporated. Add the oil, vanilla and almond extract and beat until well mixed. 3. Fold in the flour mixture. Then stir in the chocolate chips. 4. Using a cookie scoop place balls of dough an inch or so apart, (I did 6 to a tray). Or if you don't have a scoop; drop 2 tablespoon size amounts of dough on your baking pan the same way. 5. Bake 10 minutes. Let cookies cool slightly on baking pan before transferring to a wire rack to cool completely.
