Vegan Veggie Fried Rice

This is one of those recipes that is super easy to make, doesn't take much time, and is something my toddler will actually eat a ton of. And I like it because I know he's gotten some veggies in too! For a more grown up version I always give a drizzle of siracha on top and some fresh kimchi on the side. (pictured)

1 cup dry jasmine rice
1 tsp garlic powder
3 tbsp tamari or soy sauce
1/2 tsp sesame oil
1 tsp peanut oil
1/2 inch piece fresh ginger minced
1/2 cup frozen peas
1/2 cup frozen or canned corn
Butternut squash zigzags (or other veggie of choice)

1. Cook rice according to package instructions. (I usually do 1 cup dried rice to 2 cups water).
2. Meanwhile bake squash on a parchment lined baking sheet in oven at 400°until cooked through, about 20 minutes.
3. In a large pan on low, heat peanut oil and add corn and peas. Add cooked rice and ginger.
4. Stir to combine. Saute for a few minutes and then add squash, a tsp of garlic powder, a few drops of sesame oil and 3 or more tbsp of soy sauce.
5. Mix all together and serve.

-You can add any veggies you want. More varieties or a frozen mix of peas carrots and corn. You may want to add more or less garlic powder and or tamari.
